Gluten Free Zuppa Toscana

This easy zuppa toscana recipe is absolutely delicious. Not only is this gluten free zuppa toscana, but it is also a dairy free zuppa toscana without heavy cream. I chose to make this zuppa toscana with coconut milk and it was absolutely perfect!

Ingredients

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 tbsp minced garlic
  • 16 oz ground sausage
  • 1 qt chicken stock or bone broth
  • 6 cups water
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp marjoram
  • 1 tsp granulated garlic
  • 6-8 red potatoes sliced thin
  • 8 oz kale washed and chopped
  • 1 cup coconut milk optional

Instructions

  • In a large stock pot on medium heat, heat the oil.
  • Add the onions and garlic and cook until the onions are translucent about 2-3 minutes.
  • Add the sausage, cook until browned about 8-10 minutes.
  • Add stock, water, spices and seasonings. Bring to a boil.
  • Add the potatoes and bring back to a boil and cook for about 15 minutes, the potatoes should be tender.
  • Add the kale and coconut milk. Bring to a simmer and cook for an additional 10 minutes. Enjoy!
