Vegan Feta Pasta

Vegan feta pasta bake has been all the rage and this super easy 30 minute dinner recipe is the perfect gluten free vegan pasta recipe to try! We enjoy vegan feta tomato pasta every single week.

Ingredients

  • 8 oz baby tomatoes washed
  • 2 tbsp diced garlic
  • 1 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp granulated garlic
  • dash pepper
  • 6 oz feta crumbles vegan
  • 8 oz gluten free penne pasta cooked and drained

Instructions

  • Preheat the oven to 425ºF
  • Add your tomatoes to a medium size baking dish
  • Drizzle the tomatoes with oil and sprinkle them with salt, pepper and granulated garlic
  • Bake for 20 minutesRemove the tomatoes and smash them a little bit with a fork
  • Pour the feta in and stir it up. Add the baking dish back to the oven and bake for an additional 15 minutes
  • While this is happening cook your pasta
  • Once the tomato and feta mixture is done toss the pasta in it and serve with parmesan and basil
