Sheet Pan Cod Dinner

This simple cod dinner is the perfect easy gluten free weeknight meal

Ingredients

Herb Blend

  • 3/4 tsp sea salt pink Himalayan preferably
  • 3/4 tsp granulated garlic
  • 3/4 tsp parsley
  • 1/4 tsp sage
  • 1/4 tsp rosemary
  • 1/4 tsp thyme
  • 1/4 tsp pepper
  • 1 lb baby potatoes
  • 10-14 small carrots
  • 2 tbsp avocado oil or olive oil
  • 4 Gorton's Simply Bake Cod Garlic Butter Fillet's

Instructions

  • Preheat the oven to 425ºF.
  • In a bowl add the potatoes, 1 tbsp. of oil and half of the herb blend. Stir to coat the potatoes.
  • Line a baking sheet with parchment paper and pour the potatoes on 1/3 of the sheet.
  • In the same bowl add the carrots, remaining oil and remaining herb blend. Stir well to coat. Add to the baking sheet.
  • Place in the oven for 10 minutes. Remove from oven and reduce the heat to 350ºF. Add the cod to the baking sheet and bake for another 29 minutes.
  • Remove from the oven and serve! It's that simple and easy!
