This simple gluten free and vegan bean chili is the perfect weeknight dinner

Ingredients
1tbspavocado oil
1tbspminced garlic
1yellow oniondiced
28ozcan crushed tomatoes
215 ozcan lentil beansdrained
115 ozcan kidney beansdrained
215 ozcan black beansdrained
115 ozcan tomato sauce
1tspdried cumin
2tspdried parsley
2tspdried basil
1 1/2tbspchili powder
1tspsea salt
1/4tspground pepper
Instructions
In your instant pot add the oil, onion, and garlic. Turn it on saute mode. Saute until onions are translucent about 4-6 minutes.
Turn the heat off and add the tomatoes, beans, tomato sauce, and all the spices. Stir to combine well.
Cook on bean/chili mode on high pressure for 30 minutes,
Once cooking is done, release the pressure and serve.
