Gluten Free Monte Cristo Sandwich

This easy monte cristo is made with Van's gluten free waffles. It's a savory simple recipe.

Ingredients

  • 6 Van's Gluten Free Original Waffles 1 box
  • 3 slices Ham
  • 3 slices Cheese I used vegan
  • 3 tbsp Mayo
  • 2 Eggs
  • 1 tbsp Coconut Milk
  • 1/4 tsp Paprika
  • 1/2 tsp Sea Salt
  • 1/4 tsp Pepper
  • 3 tbsp Butter I used vegan

Instructions

  • Toast the waffles. Get them crispy so they do not get soggy when soaking in the egg mixture.
  • In a shallow bowl or pie dish add the eggs, coconut milk, paprika, sea salt and pepper. Whisk well.
  • Take 2 waffles and spread mayo and each one, add the ham and cheese. Create a sandwich with 2 waffles acting as the bread and the ham and cheese inside.
  • Add the waffle sandwich to the egg mixture and allow it soak up about 15-30 seconds, then flip and repeat. While this is happening add 1 tbsp. of butter to an 8 inch frying pan and allow it to melt.
  • Add the waffle sandwich that is coated in the egg mixture to the hot butter. Allow to cook about 2 minutes, or until there is a nice golden brown crispy color outside and then flip and repeat.
  • Continue this for all 3 monte cristos. Once cooked place them on a plate lined with paper towels.
  • Serve warm, with or without powdered sugar sprinkled on top.
