Hubby's Sheet Pan Vegan Nachos

These are the perfect easy nachos that tastes amazing and can be made in a pinch.

Ingredients

  • 1/2 bag corn tortilla chips your choice, but we like white
  • 1/3 cup Daiya cheese your choice, but we like pepperjack
  • 1 cup lettuce
  • 1 medium avocado
  • 1/4 cup jalepeno nacho peppers if you want a little kick
  • 1/4 cilantro bunch about 1/3 cup
  • 3 green onions
  • 1 cup black beans or refried beans (canned)
  • Salsa and/or dairy free sour cream to top

Instructions

  • Prepare a baking sheet by adding a layer of parchment paper to the top.
  • Cover the parchment paper with the chips.
  • Sprinkle cheese on top of the chips.
  • Put the baking sheet in the oven on the middle rack and broil on low for about 7 minutes (watch them though). If you only have one broil setting then cook about 3 minutes, watching constantly.
  • While the cheese is melting over the chips in the oven, dice the green onions, lettuce, avocado, jalepenos, and cilantro.
  • When the cheese is melted, remove the baking sheet from the oven and sprinkle the black beans evenly over the top.
  • In this order, add the green onions, cilantro, lettuce, jalepeno nacho peppers, and avocado.
  • Layer the top with salsa and/or sour cream as you like.
  • Enjoy.
