Healthy Vegan Peppermint Fudge

This simple fudge is healthy, gluten free, vegan and tastes amazing!

Ingredients

  • 14 oz. Can of Coconut Cream
  • ½ tsp. Vanilla
  • 3 Cups Dairy Free Chocolate Chips
  • ¼ Cup Coconut Oil
  • 1 tsp. Pure Peppermint Extract
  • 3 Candy Canes Crushed

Instructions

  • In a medium sized sauce pan add the coconut cream, vanilla, chocolate chips and coconut oil. Allow to melt on medium heat stirring with a spatula every 30 seconds for about 6 minutes or until it is mixed well and creamy. Do not over cook! Keep an eye on it the entire time.
  • Remove from heat and stir in the peppermint extract. Grease a 9X9 baking dish (I use coconut oil) and lay a piece of parchment paper on the bottom. Pour the melted mixture into baking dish and allow it to sit and cool for two hours, or until it comes to room temperature.
  • Top with the crush candy canes. Refrigerate overnight. Enjoy!

Notes

** Do not overcook. As soon as it is melted and creamy, remove from heat. ** It is very important to let this come to room temperature before putting the candy canes on top and refrigerating. When I did not allow it to cool completely it made the oil separate slightly. **This fudge does not thicken like the traditional dairy fudge. You must keep this refrigerated. It will soften quickly when left out.
