Easy Blueberry Breakfast Cookies (Paleo, Vegan)

These easy cookies are healthy, paleo, vegan and are the perfect way to have a yummy breakfast.

  1. Preheat the oven to 350ºF.

  2. In a bowl, whisk together the grain free all purpose flour, grain free baking powder, baking soda and salt.

  3. Then you will add the solid coconut oil and cut it with a pastry cutter to form crumbs.
  4. Add the syrup, apple cider vinegar, coconut milk, and blueberries. Knead with your hands until you form a soft and slightly sticky dough.

  5. Line a baking sheet with parchment paper. With a spoon grab a ball of the dough and place it on the parchment paper. Repeat until you have 12 cookies.
  6. You can shape them with your fingers if they are rough around the edges to smooth them out.
  7. Bake for 20 minutes. Allow to slightly cool before serving.
