  • 3 Cups of Gluten Free Oats
  • 1 Cup Dairy Free Milk
  • ¾ Cup Coconut Sugar
  • ¼ Cup Honey or Maple Syrup
  • ½ Cup Coconut Oil
  • 2 Eggs
  • 1 Cup Peanut Butter
  • 1 TBSP. Vanilla
  • Dash of Salt
  • 1 ½ Cups Chocolate Chips reserve ½ cup for the topping
  • 1 Cup Shredded Coconut
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder


  1. Preheat oven to 350 degrees F.
  2. Grease a 9x13 baking dish.
  3. In a stand mixer add all ingredients (minus ½ cup of chocolate chips reserved for the topping) and mix on medium speed for 3 minutes.
  4. Scrape down the sides and mix for another 2 minutes.
  5. Pour into greased dish and bake for 30 minutes or until a toothpick comes out of the center clean. Enjoy!
