Ingredients
8ozbaby tomatoeswashed
2tbspdiced garlic
1tbspolive oil
1/4tspsea salt
1/4 tspgranulated garlic
dashpepper
6ozfeta crumblesvegan
8ozgluten free penne pastacooked and drained
Instructions
Preheat the oven to 425ºF
Add your tomatoes to a medium size baking dish
Drizzle the tomatoes with oil and sprinkle them with salt, pepper and granulated garlic
Bake for 20 minutesRemove the tomatoes and smash them a little bit with a fork
Pour the feta in and stir it up. Add the baking dish back to the oven and bake for an additional 15 minutes
While this is happening cook your pasta
Once the tomato and feta mixture is done toss the pasta in it and serve with parmesan and basil
