You will first need a pie crust. Start by making that, you will need to double it. Put one into a pie dish and then roll the other one out for the top of the pie.
Peel and cut your apples. Pre-heat the oven to 350ºF.
Add your cut apples to a bowl and sprinkle the coconut sugar, cinnamon, nutmeg, and flour over the cut apples. Stir to evenly coat the apples. Drizzle the maple syrup and give it another toss.
Pour the apple mixture into your pie shell and put the second pie crust dough that has been rolled out on top. Make the egg wash by whisking the yolk and coconut milk together. Brush the egg wash lightly onto the top of the pie. You can add a few slits to the top of the crust and sprinkle some additional coconut sugar if you desire.
Bake for 45 minutes and then allow the pie to cool for at least 25 minutes before serving. Top with vanilla ice cream or coconut cream. Enjoy!
