Baked Oatmeal Gluten Free and Dairy Free

- 3 Cups of Gluten Free Oats
- 1 Cup Dairy Free Milk
- ¾ Cup Coconut Sugar
- ¼ Cup Honey or Maple Syrup
- ½ Cup Coconut Oil
- 2 Eggs
- 1 Cup Peanut Butter
- 1 TBSP. Vanilla
- Dash of Salt
- 1 ½ Cups Chocolate Chips reserve ½ cup for the topping
- 1 Cup Shredded Coconut
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
Preheat oven to 350 degrees F.
Grease a 9x13 baking dish.
In a stand mixer add all ingredients (minus ½ cup of chocolate chips reserved for the topping) and mix on medium speed for 3 minutes.
Scrape down the sides and mix for another 2 minutes.
Pour into greased dish and bake for 30 minutes or until a toothpick comes out of the center clean. Enjoy!
