Oven Roasted Sweet Potatoes
I made these with purple sweet potatoes, but orange work well too.

- 7 Cups Diced Sweet Potatoes
- 2 TBSP. Avocado Oil
- ½ tsp. Salt
- 1 tsp. Granulated Garlic
- ¼ tsp. Pepper
- ½ tsp. Rosemary
- ½ tsp. Thyme
Preheat Oven to 425°F.
Add the potatoes to a bowl and drizzle with avocado oil. Add the seasonings and stir until the potatoes are coated evenly.
Bake for 45-50 minutes, or until they are soft with a slight crisp on the outside.
