Ingredients

  • 3 tbsp avocado oil or butter
  • 2 tbsp minced garlic
  • 2 ½ cups washed and sliced mushrooms
  • 1 lb. ground beef
  • 1 tsp sea salt
  • ¼ tsp pepper
  • 1 tsp granulated garlic
  • ½ tsp onion powder
  • 1 tsp dried parsley
  • 1 tbsp coconut aminos
  • 1 tbsp tapioca starch
  • 2 cups beef broth
  • 1 cup sour cream I use vegan or lactose free
  • 8 oz gluten free pasta cooked according to package directions

Instructions

  • Start your noodles and follow the package instructions.
  • In a large skillet on medium heat (I use a cast iron), add oil or butter, garlic and mushrooms. Saute for about 4 minutes, or until the mushrooms become golden and the garlic is fragrant.
  • Remove the garlic and mushrooms from the pan and set aside.
  • Add the beef and begin to brown the beef.
  • Sprinkle the seasonings all over and stir to incorporate.
  • Add the coconut aminos and stir well.
  • Sprinkle with the tapioca starch and stir into the meat.
  • Once the starch is dissolved and you can no longer see it, add the broth.
  • Bring to a light boil, this takes approximately 3 minutes and then reduce the heat to a simmer. Allow the sauce to thicken, this takes about 6-8 minutes.
  • Add the sourcream and stir to combine well. Allow it to simmer for about 3 minutes.
  • Turn off the heat and fold in the pasta.

Notes

Any oil will work if you do not have avocado oil, I would use olive in its place.
You could sub the beef for turkey as well, but your gravy might not thicken as easily without the extra fat from the meat.
You can use gluten free soy sauce or tamari if you do not have coconut aminos.
Any starch can be used in place of the tapioca, such as corn, potato or arrowroot.
For the sour cream I like the Follow Your Heart brand for dairy free, or the Green Valley lactose free.
