Pot Roast

This is my hubs favorite dish. The price of a roast can run high so if there is a good sale or special occasion that is when I serve this. Baking it in all of the liquid keeps it moist and tender. I prefer it made in the Instant Pot though because it comes out and shreds effortlessly, it also only takes 35 minutes. It is a great dish to make if you want to impress some dinner guests and it really is simple and easy and so yummy!!

2 or more pounds of roast
1 can diced tomatoes
1cups of red wine
1 Onion
3 TBSP. diced garlic
5 Carrots cut into bite size slices
1 tsp. Pink Himalayan Sea Salt
1/4 tsp. Basil
1/2 tsp. Marjoram
1/4 tsp. thyme
1/4 tsp. Rosemary
1/2 tsp. oregano
1 Green Bell Pepper diced
2 Bay Leaves

Instant Pot:
Pour your 1 cup of wine into the Instant Pot and place the meat in the middle. Season the meat with all of the seasonings and garlic. Pour the can of tomatoes and chopped vegetables on top and place the bay leaves in the pot. Turn the Instant Pot on the meat setting (takes 35 minutes) and make your sides. We love mashed potatoes with it.
Preheat the oven to 400 degrees. You will need a large baking dish. Pour the wine in and place the pot roast in the dish and add the other ingredients as described above. Cover with foil and bake for 50 minutes and then take the foil off for 10 minutes for a total cook time of one hour. Serve with your favorite sides.
