Gluten Free Vegan Split Pea Soup
My 2 year old loves split pea and lentil soup. I’ve been buying 2-3 cans from Trader Joes weekly since he went on solid foods. They are $2 each. Today I decided that I would crock pot a batch of homemade soup and freeze it for him to have for his lunches. The cost of the recipe in total was maybe $6 and that’s with the 2 cans of broth I used. Those can get pricey.
This one batch of gluten free vegan split pea soup soup fed us dinner (my husband had 2 bowls) and had 3 servings (2 year old size) to freeze and a large serving for my husbands lunch tomorrow.
I would say that’s a score. Not to mention I can’t eat the Trader Joes version because it contains wheat.
When my husband saw the soup the first thing he asked for was my GF French bread. Luckily I had an extra loaf from last week.
Here’s the recipe…
Gluten Free Vegan Split Pea Soup
Ingredients
1 1/2 cups yellow split peas
1 1/2 cups green split peas
One large onion diced
5 carrots diced
1 celery stalk diced
2 cans of broth (divided)
3 cups of water (or more if needed)
1 tsp curry powder
1 tsp. sea salt
2 tsp garlic salt
1 tsp pepper
2 tbsp olive oil
Extra salt and pepper to taste
Directions
Turn on crock pot to 6 or 8 hours.
It will only take 3-4 hours to cook through, so keep that in mind
Dice onion and carrot
Drizzle olive oil on the bottom of the crock pot
Add onion, carrot and celery
Stir up
Add peas and seasoning
Add one can of broth and 2 cans of water
Put lid on and check in an hour, then add 2nd can of broth and more water if needed. Allow to cook another 2 hours checking every hour to make sure there’s enough liquid.
