One Pot Lasagna Soup

Dinner is always a task. It takes planning and knowing what will please all of the palates of the home. Nothing is worse than listening to kids cry and complain about a meal that I just slaved over.

That is why I turn to gluten free dairy free soup recipes very often. My kids really enjoy soup and so does my husband and I. Soups are also typically easy to double up if needed.

If you will be serving guests it’s easy to add some bread and salad to the table and help everyone fill up.

Gluten Free Lasagna Soup

Lasagna is a recipe that I truly enjoy. It’s one of those filling comfort foods that remind me of a Sunday dinner. However, lasagna is time consuming and requires some elbow grease.

That is why I tend to just turn to this crazy easy lasagna soup recipe. It truly makes enjoying lasagna fast and simple.

This healthy lasagna soup is gluten free and dairy free (corn free too), so it avoids all of our allergies/intolerances.

What Ingredients are needed for this One Pot Lasagna Soup Recipe?

  • Oil
  • Onion and Garlic
  • Bell Peppers
  • Ground Beef
  • Basil, Oregano, Thyme, Rosemary, Marjoram, Parsley, Salt, Pepper, Granulated Garlic
  • Broth
  • Tomato Sauce and Paste
  • Gluten Free Lasagna broke into pieces

For the lasagna noodles you can use your favorite gluten free lasagna. You could even use a pasta if you can’t find one. My favorite is Banza and Jovial. 

How do I make this Lazy Lasagna Soup Recipe?

Start by adding your oil, garlic and onion to a stock pot. Heat on medium heat and saute for a few minutes.

Add the beef and begin to brown it. Season the beef with your spices.

Once the beef is mostly cooked add the broth, tomato sauce, and tomato paste.

Bring it to a boil and then add the broken lasagna noodles. Continue to cook the pasta uncovered for about 10-12 minutes, or until the noodles are tender.

You can serve with vegan cheese or parmesan and fresh chopped basil if desired.

Ingredients

  • 1 tbsp Avocado Oil
  • 1 medium onion diced
  • 2 tbsp minced garlic
  • 1 red bell pepper seeded and diced
  • 1 orange bell pepper seeded and diced
  • 1 1/2 lbs ground beef
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried marjoram
  • 1 tsp dried parsley
  • 1 tsp sea salt
  • 1/4 tsp pepper
  • 1 tsp granulated garlic
  • 4 cups beef broth
  • 1 15 oz can tomato sauce
  • 2 tbsp tomato paste
  • 2 1/2 cups broken gluten free lasagna pieces

Instructions

  • Add oil, garlic, onion and bell pepper to a dutch oven or stock pot. Heat on medium heat. Saute for 6-8 minutes, or until the onions are translucent.
  • Add the ground beef and season it with the basil, oregano, thyme, rosemary, marjoram, parsley, salt, pepper, and granulated garlic.
  • Once the beef is mostly browned add the tomato sauce, tomato paste, and broth.
  • Stir to combine and bring to a boil. Increase the heat slightly if needed.
  • Once a light boil begins add the broken lasagna pieced and cook 10 minutes.
  • Serve topped with parmesan, or vegan parm if desired. Enjoy!
