I have been telling my Husband for months now, “Please, sometimes can you just take the kids.” You know, I just want him to take them, alone… without me. For a long time I think he thought I was joking. I was very serious thought. I just wanted some time, alone. I wanted silence. I wanted to finish a blog post without being interrupted every 5 seconds.
I had a moment a few weeks ago. I just broke down and lost it. I found out my Son was eating gluten at school and his behavior had his and my own head spinning. I was tired, broken down. I was one person trying to accomplish the tasks of 10. I was a Mother, Wife and Maid trying to fulfill my dream of being a blogger. I was being tugged and pulled in every direction and I was done.
Today he did something special. I went upset to take my shower (My weekend daytime showers) and I was able to do my hair and makeup and exfoliate. (Whoohoo full Mom Victory Day!) When I came downstairs everyone was gone. I texted him and asked what happened. He took the kids to the park to play for a few hours and I was able to work on my blog and prep for some recipes.
Those are the little things that keep me going. Just a few hours here and there keep me from burning out.
So with my extra time I decided to finally throw together that fruit dip I had been craving for so long. I used to make it for parties before when I could have dairy but now being dairy free it’s been a while.
I came across a vegan cream cheese at Trader Joes and decided to give it a go. I won’t lie, it doesn’t totally taste like real cream cheese but it was pretty decent. I would totally use it in creamy pasta dishes or in my mashed potatoes. You might see it pop up in some more recipes in the future.
1 Can of Marshmallow Fluff
1 Container of Vegan Cream Cheese
Your favorite fruits (I used strawberries and apples)
In you mixer add both ingredients and mix until well combined and creamy (Mine took about 4-5 minutes). Scrape down bowl half way through. Enjoy!
