Almond Joy™ has always been one of my favorite candies. When International Delight® came out with an Almond Joy™ and Hershey’s ® coffee creamer that is gluten free and lactose free, I was beyond excited! I can finally have candy in my coffee. There are so many fun things you can do with a coffee creamer. Also, coffee is literally one of the highlights of my day. I legit wake up to drink coffee. There is nothing like a sweet cup of deliciousness first thing in the morning and International Delight® creamers provide this, but what is better than a delicious and lightly sweetened scone that pairs perfectly with your coffee? Good luck finding something!

You will need to save this recipe to make it for your girlfriend’s next coffee day. Whether they are gluten free and lactose free or not, does not matter because these scones are that good.

I took a fresh batch of these to my PTO meeting and everyone loved them, even the little kiddos that were there. My kids also went crazy for them and now they are asking for them constantly.

When you take something like a scone and dress it up to be an Almond Joy™ you have a whole lot of happy people, but you must pair this with Almond Joy™ coffee creamer in your coffee mug for the full experience.

Gluten Free Almond Joy™ Scones

These delightful scones are the perfect morning treat. 

Course Breakfast, Brunch, Dessert, Snack
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 8 Scones

Ingredients

  • 2 Cups Shredded Coconut Broiled (Divided)
  • 2 Cups Gluten Free All Purpose Flour Blend
  • 2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • Dash Salt
  • 1/4 Cup Vegan Butter Regular butter works fine too, or Coconut Oil
  • 1/4 Cup Sugar
  • 1 TBSP. Apple Cider Vinegar
  • 1/2 Cup Almonds
  • 1/2 Cup Chocolate Chips
  • 1 Cup International Delight® Almond Joy ™ Coffee Creamer

Glaze

  • 2/3 Cup Powdered Sugar
  • 2 TBSP. International Delight® Almond Joy ™ Coffee Creamer

Instructions

Toasted Coconut

  1. Turn your oven onto the high broil setting. Pour 2 cups of shredded coconut onto a baking sheet lined with parchment paper. 

  2. Place into the oven and broil for 2-3 minutes watching with the oven light on the entire time. 

  3. Remove from oven and set aside. You will use 1 cup for the batter and 1 cup to sprinkle on top of the scones. 

Scones

  1. Preheat oven to 350 degrees F.

  2. In a medium sized bowl combine the flour, baking powder, baking soda, salt and sugar. Whisk until well incorporated. 

  3. Add butter and cut with a pastry blender until butter is blended. 

  4. Add Apple Cider Vinegar, and blend with a large spoon. 

  5. Add 1 Cup of Toasted Coconut, Chocolate Chips and Almonds. Mix. 

  6. Add the International Delight® Almond Joy™ Coffee Creamer and mix with a large spoon until the batter is mixed well. 

  7. Spoon about 1/4 cup of batter onto a baking sheet lined with parchment paper. You can use a spoon to shape the scones if you desire. 

  8. Bake for 20 minutes. 

  9. Allow the scones to slightly cool and then top with glaze and the remaining toasted coconut. 

Glaze

  1. In a bowl combine the powdered sugar and International Delight® Almond Joy™ Coffee Creamer. Mix with a spoon. Set aside until the scones are ready.

    Nothing beats a fresh baked scone with a cup of coffee or tea. These look like the perfect afternoon treat. I would even eat them for breakfast. Add a bit of jam and a fresh cup of coffee and I am a happy girl. They are so easy to make to which is a bonus….you can make them all the time.

    You had me at Almond Joy. Seriously one of my favorite candies EVER. I think I’d use that creamer with a cup of cold coffee and a few ice cubes in my blender for an afternoon frappe! Those scones look dynamite too! I can only imagine how quickly they “went” at the PTO meeting!

    Adding almond joy creamer to these scones is genius! They look so flaky, tasty and fabulous. A perfect afternoon treat and also an amazing breakfast pastry! Yummy for sure!

    We are HUGE fans of International Delight. That is the only creamer that we buy. I didn’t know you could cook with it. What a great idea!! Now, I have a confession to make, I’ve taken a swig or two of the delicious creamer. It is so good and rich — I bet it tastes great in baked goods. Will certainly give it a try.

    I haven’t had an almond joy in what feels like FOREVER. Thanks for reminding me that I need one haha. I totally need to try these scones first though – they are so lovely! I’m jealous I wasn’t at a meeting with these scones!

    I’d never ever thought about using coffee creamer as a flavoring in a baked good! This is so smart- I love this idea! And it’s been way too long since I’ve eaten scones- I want these with a big cup of coffee. YUM!

    This is such a great idea! Your method for making glaze is my go-to, but I’ve never thought to use a coffee creamer. Brilliant! I always have some on hand, too. Because, well, COFFEE. <3
