Oven Roasted Savory Sweet Potatoes
Sweet Potatoes are literally something I can never get enough of. Gimme… gimme… all of the sweet potatoes please.
I am not incredibly picky about how they are made either. I just want them… all of the time.
This Sweet Potato recipe is what I turn to time and time again.
Sweet Potatoes are a versatile and extremely healthy starch. They are the perfect side dish to accompany any meal and you can dress them up so many ways. This simple vegan and paleo recipe is what I turn to time and time again because of the simplicity and flavor.
How I grew my love for these typically strangely shaped orange things (potatoes pictured are purple- how fun is that!) is actually a funny story. Growing up I only had sweet potatoes on holidays. It was the sugared up version with melted marshmallows on top. Don’t get me wrong, I absolutely loved them and I always looked forward to it on Thanksgiving and Christmas.
These sweet potatoes in my home came out of a can. You can read more about My Story and hear about the unhealthy food journey (called the processed 80’s and 90’s) that ultimately contributed to my health issues. In my 20’s I learned that you could purchase a sweet potato in the produce section, peel it and it eat. AMAZING!
My true love affair with sweet potatoes began when I did my first Whole 30 in 2015. The Whole 30 back then did not allow russet potatoes, just sweet potatoes. Cooking them in coconut oil sprinkled with granulated garlic, sea salt and pepper became my favorite side dish, ever! Every single morning I would eat sweet potatoes with eggs and chicken sausage. This stuck and is still my favorite breakfast.
The great thing about these Oven Roasted Sweet Potatoes is that you can make these on a Sunday and have them in the fridge for an easy reheat each morning with breakfast. Oven Roasted Sweet Potatoes are also perfect to go with lunch, dinner, or serve on holiday. If you can find these fun purple potatoes, they make them even more presentable.
You simply can not go wrong with these and they truly are easy to make. Feel free to dress them up with more herbs if you would like as well.

Oven Roasted Sweet Potatoes
I made these with purple sweet potatoes, but orange work well too.
- 7 Cups Diced Sweet Potatoes
- 2 TBSP. Avocado Oil
- ½ tsp. Salt
- 1 tsp. Granulated Garlic
- ¼ tsp. Pepper
- ½ tsp. Rosemary
- ½ tsp. Thyme
Preheat Oven to 425°F.
- Add the potatoes to a bowl and drizzle with avocado oil. Add the seasonings and stir until the potatoes are coated evenly.
- Bake for 45-50 minutes, or until they are soft with a slight crisp on the outside.
