I am such a sucker for rice krispy treats. They are so addicting and I am totally guilty of killing almost an entire tray to myself. When I was pregnant with my Son I ate WAY too many. If they are in the house I will eat them all, so they are a special treat.
Going gluten free was a challenge at first finding GF krispy rice cereal. Now that we are dairy free too, I was trying to figure out a way to make them. I didn’t like the thought of the Vegan butter because its not my favorite but coconut oil is! I sweat coconut oil.

These rice krispies are the perfect amount of crunchy sweetness and such a fun and yummy treat to make with your kids. You can make them fun by adding chocolate chips, chocolate drizzle or sprinkles.
Here I made them festive for the Holiday’s by taking the mixture after cooking and laying it on a Silicone Baking Mat. I flatten it slightly and then cut out Christmas tree’s with cookies cutters. I then decorated them with melted chocolate, sprinkles, candy canes and some chocolate candies.
They are fast and easy to make and the kids love decorating them. I am sure Santa would love to eat them too!
5 Cups Gluten Free Crispy Rice Cereal (If it is not labeled GF then it likely has malt extract, be careful!)
1/3 Cup Coconut Oil plus 1 tsp. for greasing your baking dish
In a large sauce pan on medium heat melt your coconut oil and then add your marshmallows, stir until they are combined and melted and then add the cereal. Add half of it, stir it well and then add the other half. Pour it into your greased pan and spread out. Allow to cool and then enjoy!
