Oven Roasted Carrots- Naturally Gluten Free and Vegan

Naturally gluten free and vegan-carrots are an amazing option for a vegetable side dish with any meal.

Roasting them with your favorite seasonal herbs is the perfect way to give them optimum flavor that will go with any dish.


Carrots are a veggie that I grew up eating often. However, I rarely ate them cooked. It was a fun and delicious snack that I had often-just simply raw with a side of ranch dressing.

I didn't actually think of cooking them as a side dish until I was in my 20's and saw a family that I Nannied for making them that way. They liked to cook theirs in honey. I prefer mine savory, so an herb roasted dish is perfect.

I love serving these with BBQ or any roasted meat. They are excellent along side my Roasted Red Potato recipe because you can cook them all on the same sheet pan. You just add the carrots for the last 10 minutes. I love simple ways to cook that dirty less dishes.

When you cut them into sticks they resemble french fries and my kids like to call them carrot fries. It is a fun way to get them to eat their veggies.

You can use any color carrot for this dish. My kids prefer the orange ones because of that comfort it brings them of knowing I'm not tricking them into eating something else, I suppose. The rainbow carrots are very pretty though, when you are serving this for guests.

It makes enough for 4 but if you have extra hungry people to feed or added guests I would double or triple as needed. Usually 2 carrots per adult is a good rule of thumb.

These also taste excellent for leftovers in the morning. Simply reheat with your potatoes and you can eat them with your eggs and meat.

This simple herb roasting can be done with any other root vegetable as well.

Feel free to add any other herbs or spices to your liking. You simply can't go wrong with these.

Serves 4

Prep: 10 minutes

Cook Time: 20-25 minutes



Ingredients:



4 Large Carrots or 8 small

2 TBSP. Avocado or Coconut Oil

1 TBSP. Fresh Parsley if not just used 1 tsp. dried parsley

½ tsp. Pink Himalayan Sea Salt

¼ tsp. Pepper

½ tsp. Sage

½ tsp. Thyme



(This serves 4)




Directions:




1.       Peel, wash and cut your carrots.


2.       Preheat your oven to 400 degrees.


3.       In a bowl add the carrots, avocado oil and all of the seasonings and stir well. Lightly grease a baking sheet and pour the carrots onto it so that they are all laid out evenly.


4.       Cook for about 20-25 minutes, until the carrots are tender.
