Vegan Chocolate No Bake Cookies

These vegan chocolate no bake cookies are so simple with only 7 easy to find ingredients. They are better than the no bake cookies you remember eating growing up. They are healthier too! Shhh, I won’t tell. These cookies are gluten free, dairy free and made with delicious coconut oil. They will quickly become your favorite gluten free no bake cookies.

 
My Mom didn’t cook a lot growing up. She was mostly a single Mom, working full-time. There are a handful of things she made though- Biscuits and Gravy, Ribs, Fried Potatoes and Beans, Fruit Dip and these No Bake Cookies.

My Mom loves her sweets. Like for real, eat an entire tray of cookies in one night kind of love. She is a tiny thing too, so I never quite understood where it all went.
 
I loved these cookies growing up. They take 10 minutes to make and since you don’t have to turn on the oven and you store them in the fridge, they are perfect for summer time. I would make them often and so would my mom. They never lasted longer than a day or two though.

After going gluten free I made these cookies often just by switching regular oats to gluten free ones. They were amazing and you would never know the difference. But, once I went dairy free the vegan butter wasn’t cutting it for me. I decided then to switch the butter for my favorite ingredient- coconut oil!
 
OMG, coconut oil truly transformed this recipe. It made them so silky and perfect. Truly the best gluten free no bake cookies!

What ingredients are needed for these easy gluten free no bake cookies?

all of the ingredients needed to make these vegan chocolate no bake cookies

  • Gluten Free Oats: Zego is my favorite brand.
  • Coconut Oil
  • Cocoa Powder
  • Sugar
  • Peanut Butter: Creamy peanut butter is best. 
  • Vanilla
  • Milk: Any plant based milk will work. My favorite is coconut, you can even use a chocolate milk for a richer flavor. 

How do I make these gluten free no bake cookies?

In a large saucepan combine all ingredients except oats and vanilla. Melt ingredients and bring to a boil, add the oats. Reduce and simmer for 6-8 minutes.

Remove from heat, add vanilla and spoon onto parchment paper and refrigerate overnight. Store them  in the fridge.

  • ½ Cup Coconut Oil
  • 1 Cup Sugar
  • 1 Cup Chocolate Almond Milk
  • ¼ Cup Cocoa Powder
  • ½ Cup Peanut Butter
  • 3 Cups Gluten Free Oats
  • 1 tsp. Vanilla

Instructions

  • In a large saucepan combine all ingredients except oats and vanilla.

      You can order it at Barnes and Nobles. So, I am pretty sure you can pay at the store and they will order it for you. It is only sold at one of my local stores right now. What state do you live in?

  2. Do these set up the same way the original ones do? Or do they only set because of refrigeration?

      They must be refrigerated for them to set up. They need to be stored in the fridge as well.

    This is one of my favorites. I love all the ingredients and the tray quickly disappears if I am home.

    Mine were way too oily
    I did use regular rolled oats though, which may have contributed to that
    I would still definitely lower the coconut oil

    1. The peanut butter could make a difference as well, just depending what brand you use and if there is oil added. Maybe reduce it to 1/4 cup of oil and see if that helps. You could use butter or vegan butter too.
