I am always excited to try new brands and products that I have never had. It is hard to hear about new items because unless your store carries them, they often go undiscovered. That is why when I find out about companies that have gluten free offerings; I always jump on board to share them with you.
Because I am gluten free and dairy free, I did have to modify the listed ingredients on the box. What I liked about this mix was that it did not need a lot of ingredients and it was super easy to make. If you are buying a boxed mix it is usually because you don’t have time to deal with the fuss of a from scratch recipe. So, when boxes come with a long list of ingredients and directions, it can be a bit frustrating.
It took me less than 10 minutes start to finish before I was ready to put these in the oven. I will start with telling you what I used in place of some of the ingredients. I used vegan butter in place of the butter, coconut oil for the oil and I used Ripple brand non-dairy milk for the milk.
The crumb topping was as simple as mixing the mix with the butter and sprinkling it on top. It was so easy that the kids could help you with this or older kids could make this on their own.
They smelt amazing while baking and I couldn’t wait to test one out. They do contain corn though, as do almost all gluten free mixes, so I limited myself with them, but that was hard because they were so delicious. They were moist, fluffy, and sweet and just like a muffin should be. I love crumb topping on anything so that was really one of my favorite parts. Even my daughter who tends to only eat chocolate chip muffins ate these very happily.
