Chocolate Mug Cake (Grain Free, Dairy Free, Gluten Free)

I created this Chocolate mug Cake recipe when my husband was working swing shift and I wanted a sweet treat just for myself after the kids went to bed. I do eat grains, but I try to limited myself when I can because my body appreciates it.

I found that is was hard for me to finish the entire chocolate mug cake on my own. I often would leave 1/3 of it. However, my husband had no problem finishing his entire mug. If you are looking for a light treat 2 could share, but if you are a chocoholic then you will want your own chocolate mug cake to yourself.

This Chocolate Mug Cake is light and fluffy and simple to throw together when you need something to crave your sweet tooth, but do not need an entire cake around to tempt you.

I thought it would be the perfect Valentines Day recipe for something who might not be a baker and wanted to make a treat for their valentine. Make 2, serve it up with some Chocolate Covered Strawberries and a bottle of champagne and you will have a grain free, dairy free sweet Valentines day.  Chocolate Mug Cake is always a winner and everyone will love it!

Chocolate Mug Cake (Grain Free, Refined Sugar Free)

Simple and healthy sweet treat for one or two.

Ingredients

  • 2 TBSP. Coconut Flour
  • 1 TBSP. Cocoa Powder
  • ¼ tsp. Baking Powder
  • 1 TBSP. Coconut Sugar
  • 1 tsp. Coconut Oil Melted
  • 1 Egg
  • 1 TBSP. Maple Syrup
  • ¼ Cup Non Dairy Milk
  • 2 TBSP. Dairy Free Chocolate Chips

Instructions

  1. In a microwave safe mug, add all of the dry ingredients and whisk together with a fork until well incorporated.
  2. Add the egg, maple syrup and milk. Whisk well, then add the coconut oil and whisk again until the coconut oil is mixed through.
  3. Add chocolate chips and stir.
  4. Microwave for 2 ½ minutes.
  5. Garnish with cherries and sprinkles if desired.
