Chocolate Mug Cake (Grain Free, Dairy Free)



I created this recipe when my husband was working swing shift and I wanted a sweet treat that was grain free after the kids go to bed. I do eat grains but I try to limit myself a bit because I just feel better when I do.

I found that it was hard for me to finish the entire thing. I often left 1/3 of it and my husband would finish it when he got home. I made it for him though and he had no problem finishing the entire mug.

This mug cake is light and fluffy and fairly simple to throw together if you just need a treat for one or two.


I thought it would be the perfect Valentine treat to enjoy together. It is simple enough for anyone to throw together and you can really dress it up to make it look special.


Yields: 1 Mug Cake
Time: 8 minutes 
Ingredients:

2 TBSP. Coconut Flour

1 TBSP. Cocoa Powder

¼ tsp. Baking Powder

1 TBSP. Coconut Sugar

1 tsp. Coconut Oil Melted

1 Egg

1 TBSP. Maple Syrup

¼ Cup Non Dairy Milk

2 TBSP. Dairy Free Chocolate Chips



Optional:

Cherry

Sprinkles



Directions:

1.       In a microwave safe mug, add all of the dry ingredients and whisk together with a fork until well incorporated.

2.       Add the egg, maple syrup and milk. Whisk well, then add the coconut oil and whisk again until the coconut oil is mixed through.

3.       Add chocolate chips and stir.

4.       Microwave for 2 ½ minutes.

5.       Garnish with cherries and sprinkles if desired.
