Chocolate Healthy Peppermint Fudge (Gluten Free, Dairy Free)

Once going dairy free I knew I would have to figure out a new way to make fudge and make it simple. I am a huge fan of anything coconut, so using coconut oil (to make it harden) and coconut cream was a no brainer.

I used chocolate chips because they make it taste so rich and creamy and the sweetness of semi sweet makes it so you don’t need any added sugar. If you love the flavor of dark chocolate, then by all means use that instead!

This is the perfect treat to serve when your friends are coming over for champagne. It pairs perfectly with some Brut (trust me ;).

This is also the perfect treat for gift giving, or a cookie exchange party. It is egg free, vegan, and healthy, so you can use this to cover all the boards.

You may ask why I grease the pan with coconut oil. I have asked myself this question too because it does harden in the fridge, but I have had the be results cutting it out this way.

Remember to keep this refrigerated because if it gets too warm it will soften and eventually melt.

How do I make this Healthy Peppermint Fudge?

  • In a medium sized sauce pan add the coconut cream, vanilla, chocolate chips and coconut oil. Allow to melt on medium heat stirring with a spatula every 30 seconds for about 6 minutes or until it is mixed well and creamy. Do not over cook! Keep an eye on it the entire time.
  • Remove from heat and stir in the peppermint extract. Grease a 9X9 baking dish (I use coconut oil) and lay a piece of parchment paper on the bottom.
  • Pour the melted mixture into baking dish and allow it to sit and cool for two hours, or until it comes to room temperature.
  • Top with the crush candy canes. Refrigerate overnight. Enjoy!

Pro Tips:

** Do not overcook. As soon as it is melted and creamy, remove from heat.

** It is very important to let this come to room temperature before putting the candy canes on top and refrigerating. When I did not allow it to cool completely it made the oil separate slightly.

**This fudge does not thicken like the traditional dairy fudge. You must keep this refrigerated. It will soften quickly when left out.
