Gluten Free Chocolate Cake (Dairy Free)

Who doesn’t like cake? Well, this girl didn’t like cake for 10 years. Every time I ate it, I was running to the bathroom and had to leave every single party early. Now that I am gluten free and dairy free, that is not an issue! This Gluten Free Chocolate Cake is so yummy and fluffy, that you would never even know that its not a regular gluten filled chocolate cake.

I hope that this will be your go-to when it someone’s birthday, or if you just feel like celebrating. It is also a great idea to make a bunch of cupcakes and keep them in the freezer. They are perfect for when the kids are invited to birthday parties or if there is a celebration at school.

This cake is so delicious that even my family members who eat gluten request it. They love it with some dairy free vanilla ice cream.

It is simple to make and is the perfect chocolate cake base for any recipes that you are wanting to make. I also use it to make cake donuts. What a treat they are!

Ingredients

  • ½ Cup Vegan Butter
  • ½ Cup Vegetable Shortening
  • 2 ½ Cups Powdered Sugar
  • 1 tsp. Vanilla
  • 4 tsp. Coconut Milk

Instructions

  • With a beater cream butter and shortening.
  • Add sugar, and then add vanilla and milk.
  • Beat on medium high for about 3 minutes until very smooth and fluffy.

Ingredients

  • 1½ cups water
  • â…” cups coconut oil
  • 4 eggs
  • 2 tsp. vanilla extract
  • 1 ½ cups of sugar
  • Dash of salt
  • 1 tsp. xanthan gum
  • 2 tsp. baking powder
  • 1 cup cocoa powder
  • 1½ cups GF All Purpose Flour
  • Buttercream Frosting

Instructions

  • Preheat the oven to 350 degrees.
  • Beat the eggs, sugar and vanilla.
  • Once combined, add the melted coconut oil and mix for 2 minutes.
  • Add water, flour, cocoa powder, xanthan gum and baking powder.
  • Once all ingredients are mixed well, pour into a greased (I use coconut oil) cake pan or cupcake liners.
  • Bake at 350 degrees. An 8 inch cake takes about 30 minutes and cupcakes take about 17-22 minutes.
