Devils Food Pancakes
We are self-declared chocoholics in this house. Just smother anything in some damn chocolate and watch as it is devoured. Chocolate chips are my main bribery tool and I must buy them in bulk. If my kids do not see those little chocolate morsels atop their treats you better believe they are sticking their noses right up in the air.
My kids love pancakes. I try not to eat carbs for breakfast but it is hard to resist my pancakes. They are so fluffy and delicious with just the right amount of sweetness.
Sometimes you just need to eat chocolate for breakfast. I know… chocolate for breakfast? Well, why not! You need to live sometimes and these pancakes will definitely make you feel alive. They are also pretty clean made with coconut sugar, coconut oil and flax seed.
So have those pancakes and eat them too already.
¼ Cup Coconut Sugar
1 Tbsp. plus 1 Tsp. Baking Powder
Dash of Pink Himalayan Sea Salt
¼ Cup Dutch Cocoa Powder
2 Tbsp. Ground Flax Seed
¼ Cup Melted Coconut Oil (Plus additional for the pan)
2 Tsp. Vanilla
2 ½ Cups Non Dairy Milk (I use coconut)
Chocolate Chips (Optional)
In a large bowl add your flour, sugar, and baking powder, salt and cocoa powder. Mix well. Add eggs, flax seed and mix. Add coconut oil and mix, add vanilla and milk and mix well. Heat coconut oil on a large skillet on medium heat. I use 1 Tbsp. to make silver dollars and I use ¼ cup of batter to make a normal size pancake. Heat until the pancake is bubbling in the middle. You can test if it is ready by sticking your spatula under the pancake and if the batter on top starts rolling then it is not ready to flip. Cook about 2-3 minutes on one side and then one minute on the other side.
