As an adult I really enjoy fish. Other than the worry that now comes along with eating it. Farm raised vs. Wild Caught and now I her about the shrimp from China is full of chemicals. Ugh… Something else to worry about. I typically purchase my fish from either Costco or Trader Joes. I always choose wild caught when available. We do not eat it a lot but when we eat white fish I prefer it prepared this way or as Fish Tacos.







To my surprise my Son really likes fish. I usually don’t make it much because it is expensive and you have to worry about mercury and where your fish is coming from. I have found wild caught fish in the freezer section at Trader Joe’s and the price is very reasonable. One money saving tip is TJ’s sells small pieces of the fish (not fillet) and its half the price. That is how I usually buy the fish. You get about 1 ½ LBS. for $6.00 versus the 1 Lb. filet for $7.50.



This is one of our favorite ways to each fish. This would be perfect for your fish and chips craving.




Ingredients:



2 Lbs. of your favorite fish

1 Cup White Rice Flour

½ Cup Coconut Oil

1 Tbsp. Granulated Garlic

½ Tsp. Thyme

Salt and Pepper



Directions:




Mix the flour and seasonings together in a shallow bowl. Heat the coconut oil in a skillet. Coat both sides of the fish well in the flour mixture and then put in the skillet and cook about 8 minutes on each side. That’s it! Enjoy!
