Oven Roasted Carrots

Carrots are such an amazing veggie that brings a delicious flavor to so many dishes. You can make them a thousand ways and every way they never disappoint. One simple way to make them is to season them to bring out their sweet and juicy flavor and then roast them in a healthy oil. 


Knowing that you are bringing a delicious healthy vegetable side dish to your table is a great feeling. Once you taste them you will feel even better.

Ingredients:

4 Large Carrots or 8 small
2 Tbsp. Avocado or Coconut Oil
1 Tbsp. Fresh Parsley if not just used 1 tsp. dried parsley
1/2 Tsp. Pink Himalayan Sea Salt
1/4 Tsp. Pepper
1/2 Tsp. Sage
1/2 Tsp. Thyme

(This serves 4)




Directions:


Peel, wash and cut your carrots. Preheat your oven to 400 degrees. In a bowl add the carrots, avocado oil and all of the seasonings and stir well. Lightly grease a baking sheet and pour the carrots onto it so that they are all laid out evenly. Cook for about 20-25 minutes, until the carrots are tender.
