Slow Cooked Carnitas

While doing a Whole30 I decided to make shredded Carnitas. Even though that challenge is long gone, I still continue to make these often because they are so versatile. I always use my Instant Pot when I make this. If you have not gotten an Instant Pot yet, do yourself a favor and order 2! One for you and one for someone you really love because this thing is my go-to every day!!

Slow Cooked Carnitas:

1 pork shoulder roast
3 cups of broth
2 tbsp. chopped garlic
1 tsp. cumin
1 can diced green chiles
Salt and Pepper to taste

Directions:

Add all ingredients to your Instant Pot and cook on the poultry setting. When done take out and shred and then add back in the pot and let it sit in the juices for about 10 minutes and then serve any way you choose. Enjoy!!


Salad:
For the salad I had a bed of organic romaine lettuce, salsa. guacamole, tomatoes, green onions, bell peppers, yellow onion and some of Tessame's southwest ranch dressing.
