My Whole 30 Journey Days 1-7

I've had an issue with sugar my entire life. Going GF definitely changed my relationship with food but I still feel my relationship with sugar is unhealthy. Since having my daughter I've had major gut inflammation and my best friend introduced me to the whole 30 challenge. At first I didn't even consider it an option for me but after hearing about her success I thought, why the hell not? I'm up for the challenge! 

Day 7:

I had leftover carnitas from the other night and threw together a salad 

Dinner:
I was tired and just not feeling it, so I fried some sweet potatoes, grilled a sausage and roasted the veggies I had on hand.

Day 6 was not so bad other than the nuisance of dishes and constant chopping, cooking and cleaning. I am also running out of creative ideas and most of the recipes require things I do not have on hand right now. Running to the grocery store every other day is not an option as we have a fixed amount of grocery money each week and I also live a ways out from everything so its a 20 minute drive each way to the store, no thanks. I have discovered sliced apples and almond butter, yum...yum...yummy. It is crazy delicious and perfect to lift my spirits when I feel a little cranky. 



Day 5:
I made it to day 5! Boy, day 4 had me wanting to drink my wine but I powered through with macadamia nuts and fried bananas.

Breakfast:

This is the same version as every morning but I threw in some bell peppers. Yummy :)

Lunch:
I had a spinach salad with cucumber and bell peppers and a grilled chicken breast. These chicken salads are my favorite and I'm trying to keep veggies prepped in the fridge to throw them together quickly. This Tessemae's dressing makes anything better. It's got a spicy kick. Yum!!!

Day 4:
Breakfast:
I've eaten the same thing for the past 4 mornings. Sweet potatoes, 2 eggs and 2 slices of prosciutto. I might switch it up next week.

Snack:

Lunch:
This is taco meat with lettuce, green onion, guac, bell pepper, tomatoes, salsa and some dressing.

Dinner:


Day 4: Today has not been too bad. I love my coffee with light coconut milk. I am going to continue to always drink it this way. I have decided once my 30 days is up I am going to really limit my dairy to cheese very sparingly. I am also going to only have coconut sugar unless we are somewhere on a special occasion. I prepped a ton a veggies today by peeling, chopping and putting in containers. The hardest part of this is all of the prep and cooking. My sink is constantly full of dishes and I can't keep up with them. I am also leaving the cutting board, peeler and chopping knife out on the counter all day. I am still having cravings for my afternoon sweet. I often have hot tea in the afternoon with some cookies while I work. Right now I am fighting them with macadamia nuts. 

Day 3:
Breakfast was the same as before. 

Lunch:
Sweet potato nachos loaded with all the fixins'.

Dinner:
Date night was spent picking out a stroller, Home Depot and Chipotle. Yes, it was exciting.

Dessert:
I needed something while watching the Cookie Monster (Aka the Hubbs) downing the chocolate chip cookies I keep stocked in the freezer. Well folks, this did the trick.

Mmmmm, bananas fried in cinnamon and coconut oil. 

Day 3: Today was the first time since being pregnant with my kids that I felt the urge to eat first thing in the morning. I am not a breakfast person. I usually skip breakfast and drink coffee until my blood sugar drops so low I am shaking and then what do I do- I reach for sugar. Cookies, muffins, a bar of some sort and the cycle begins. Today when I woke I needed to eat so the first thing I did was throw breakfast together. I even ate before feeding the baby and that is not my usual routine. I... just... needed... to... eat, so I did. I was much happier after my sweet potato, egg and prosciutto plate. I then went about my normal daily routine. The Hubby and I have a date night tonight so it looks like chipotle will be on the menu for dinner.

Day 2:

Breakfast: I ate the same as yesterday and I will have the same again tomorrow. Right now it's my favorite meal, I'm really enjoying it.

Lunch:
I grilled a chicken breast that I seasoned and drizzled some olive oil. My salad was greens, tomato, bell pepper, green onions, cucumber and this amazing salad dressing my bestie whole 30 buddy introduced me to. The salad was so yummy!!!

Dinner:
I threw this chili together. It was ground beef with tomato sauce, diced tomatoes, onion, carrot, bell peppers, chili powder, cumin, garlic, salt and pepper. I topped it with green onions and it was good.

Day 2:
Today I woke up feeling good but half way through the day I started to feel like sh@$. My head was foggy I was tired and a little cranky. I had to eat dinner early because I started work at 5pm so by 7:45 I was hungry with no snacks. I ended up eating some tuna. I will be buying compliant laurabars tomorrow for situations like this. I'm hoping the crappy feeling face ends soon and my energy comes back. Today I have had visions of shoving a cookie in my mouth because I normally would when a craving like this hits but I'm staying strong!! If I get home early enough I might fry a banana.


Day 1:
Breakfast:
2 Eggs fried with sweet potatoes, 2 slices of prosciutto and coffee with coconut milk.
Lunch:
Chicken patty with salsa, tomato, guac, lettuce and green onion.
Dinner:
Baked pork chops with onions and apples, carrots, sweet potatoes and broccoli.

Summary of Day 1:
I realized I love sweet potatoes. I love potatoes but not a fan of the sweet potatoes. Sure, during the holidays when they are all dressed up with marshmallows, butter and brown sugar but just cut up and fried or roasted? YES! They were so good at breakfast I decided I needed them with dinner too!! 
I was full all day today. I never once felted famished and when a slight notion of hunger began it was once again meal time. Everything I ate was delicious and very satisfying. My husband had the same lunch and dinner as me and he was happy with his food. 
There is tons of cake in my house (my sons bday was yesterday) and under normal circumstances I would have eaten some but today I didn't crave it. I know I will later on down the road but I'm excited to try some dessert recipes I've found (fried bananas and cooked apples) so hopefully I will trek through those moments unscathed.
