Blackberry Cobbler (Gluten Free and Dairy Free)

Summer is here and nothing screams summer to me more than cobbler. With all of the berries around here I am in Berry Heaven. We couldn't possibly eat them all before they start to spoil so I decided to make something that I've never made before. Cobbler is a favorite for me, especially with a few scoops of homemade vanilla ice cream. Being super prego this is just what I needed. I decided to throw together a blackberry cobbler and use clean ingredients. This is what I came up with.
I used coconut sugar because we try to not use any other sweetener around here. However,  it does have a distinct taste so f you haven't used it before or you don't like it then organic sugar will work just fine.

Blackberry Cobbler


5 cups of washed blackberries
1/2 cup of water
2 cups of sugar (coconut or organic)

1 3/4 cups All Purpose GF Flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. xanthan gum
2 1/3 cups Almond Milk
2 tbsp. sugar
1/2 cup of coconut oil

Preheat your oven to 350
Put your coconut oil in a baking dish and put it the oven. Allow the oil to melt during the preheating process. While the oil is melting start your berries. Put your berries in a sauce pan with the water and sugar on medium heat and bring it to a boil. Allow it to boil for about 8-10 minutes. While it is cooking make your cobbler mixture by adding all of the ingredients to the bowl and mixing well. Once the oil is melting pull out the dish and pour the cobbler mixture on top of the melting oil. Then you can spoon the berries and some of the juice on top and put in the oven and bake for about 45-55 minutes until it is cooked through. Serve with vanilla ice cream. Enjoy!
