Gluten Free Ice Cream Cake!

This cake was super crazy delicious. I made it for my Husband’s birthday per his request. It was my first gluten free ice cream cake and it was glorious. Of course take it out and let it thaw for a half hour or so before trying to cut through, but you will not be sorry. You will be coming back for more. No one will know it’s gluten free, so don’t tell them if you don’t want to. I like to tell everyone after they complement me on how delicious it is.

Remember to plan ahead. This is not something you can create on a whim, start planning a few days ahead and give yourself at least 3 days to create. Keep covered well in the freezer. If you allow the sheet cake to freeze overnight, put either foil or parchment paper between the layers.

Gluten Free Ice Cream Cake
So I had an idea of how I would create this cake, and it did not work out how I expected. I had quite a mess to clean up. Let’s just say my freezer was full of melted ice cream. This was late at night, so I went to bed with the cake in the freezer and I slept on it. Upon waking I realized what needed to be done and I threw it together. It worked out very nicely. I hope you enjoy it. This is something that you have to start the day before.
I would recommend baking the morning before and letting the cake cool and then freezing it all day and possibly overnight. I made it as a cake sheet and then cut it into the size I needed. If you make an entire batch of cake this would be more than enough to make 2 ice cream cakes.
Ingredients:
You will need to make a chocolate cake. You can either use my chocolate cake recipe or you can use a box or your favorite recipe.
1 container of ice cream, I like Dryer’s because it is all natural.
1 recipe for frosting, I used my buttercream frosting recipe or you can use your favorite
6 gluten free chocolate and crème cookies. I used the ones from Trader Joes, but Glutino has a great cookie too. I cut 4 in half and then crumbled the rest on the top.
Directions:
Creating the cake:
I used a loaf pan to build my cake. I measured the loaf pan and cut 3 layers of sheet cake for one loaf pan. One sheet cake should make about 8 layers, so you can easily make 2 but you would need more cookies for the top.  
You will layer it like this: cake, ice cream, cake, ice cream, cake.
I then frosted it with my butter cream frosting. Decorated with my cookies and then added additional frosting decoration along the border.
