Gluten Free and Dairy Free Peach Cobbler
I love peaches, nectarines, apricots. I wish I had fruit tree’s at my house. I am just starting to grow things. I ventured out of my comfort zone big time this year and I have been growing mint, basil, and some other things from seeds. So far, so good. I do wish though I had lots of fruit tree’s. 2 or 3 of each please.
Well, next best thing is my bestie 5 doors down who has a peach tree! All this time she thought it was apricots and I had been harassing her for months about when MY apricots were ready, lol. Well, it turns out they are peaches. Even better! She dropped off a paper bag full of ripe peaches to me today.
What is a girl to do with so many juicy, sweet, delectable peaches? Make cobbler of course. I have not made a gluten free cobbler until today. I looked to Paula Dean for some inspiration. I took her idea and tweaked the recipe completely into a gluten free and dairy free cobbler delight.
Gluten Free Dairy Free Peach Cobbler
6 cups of peeled and chopped peaches
1/2 cup water
2 cups of sugar
1 3/4 GF All Purpose Flour
2 tsp. baking soda
1/2 tsp. salt
2 1/3 cup almond milk
1 tsp. xanthan gum
1/3 cup coconut oil
Preheat oven to 350
In a medium sauce pan on medium high heat add your peaches, water and sugar. Bring to a boil and allow to cook for about 10-15 minutes. While it is cooking make your batter. Mix all of the dry ingredients together and then add the milk and mix well. In a large baking dish add the coconut oil and melt it into liquid either in the microwave or preheated oven. Pour your batter on top but do not stir (This is Paula Dean’s tip) then once the peach mixture is done spoon it on top of the batter and oil mixture and you can add a bit of the peach liquid but not too much maybe a few spoon fulls. Bake for about an hour until it is golden and the dough is cooked through. Serving this with a vanilla ice cream or soy ice cream is a special treat!
