Wet Burrito
I was recently at the store and saw Udi’s flour tortillas on sale. They are new so I decided to give them a try. Plain they are not that great, but everything taste’s great smothered in homemade enchilada sauce so I decided to make a wet burrito with them since I have not had a burrito for almost 2 years. I must say that it was very good and I enjoyed having a burrito. I bet they would taste good as quesadillas as well. I even used them to make some flour chips last night and it was pretty good.
Ingredients:
First you need to make the enchilada sauce. This is the best sauce ever. I crave it constantly.
Enchilada Sauce It is corn free, dairy free and gluten free.
Make your burrito however you please. I used the follow in mine. Just chop up as much as you need for however many you plan to make.
I put chicken in mine. I cooked it in the pressure cooker on the chicken setting along with 1 cup of enchilada sauce, 1 cup of tomato sauce and 1 cup of water. I then cut it up into shredded pieces. You can do this on the stove top if you don’t have a pressure cooker. Use the same liquid and cook it covered for about 15-20 minutes. I used 2 chicken breasts.
Chopped tomato, lettuce, avocado, and shredded cheese. I then used my pressure cooker black beans and made cilantro brown jasmine rice. It is the same as my brown jasmine rice recipe except I add a tbsp.  of chopped cilantro to it.

Directions:
I made the enchilada sauce first, and cooked the chicken breast at the same time. I had left over beans and rice so I warmed them in the microwave. I then chopped my veggies and shredded my cheese. I combined it all into a warm tortilla and put a little sauce on the inside. I folded my burrito and smothered it in sauce and topped it with a dollop of sour cream.
