Taco Salad


These are really easy to make. You do not have to make the tortilla shell, you can simply mix it all together in a bowl and serve it up- but I thought it was a cute touch.

I cooked ground beef and added homemade taco seasoning. I also used my pressure cooker pinto beans, but a can of your favorite beans would work just as well.







Ingredients:
3 cups chopped lettuce
1 pound lean ground beef cooked with 1.5 tbsp. taco seasoning
1 tomato chopped
2 cups of cooked beans (I used my pressure cooker pinto bean recipe)
1 cup of shredded cheese
1 cup of crushed tortilla chips
2 tbsp. shredded carrots (optional)
1 cup of diced onions
1 cup of salsa
1 tbsp. chopped cilantro
1 avocado cut into cubes



Directions:
To make the tortilla bowls I heated the oven to 425. I had molds that I placed a corn tortilla in and cooked them until they became crispy and took shape. About 6 minutes.

I cooked the beef with 1.5 tbsp of taco seasoning. I make this myself because the packaged stuff has additives and it’s cheaper to make my own.

You can either create your salad in layers of each ingredient like I did in the shells, or just combine it all together in a bowl and stir it up!
