Red Potato Salad


When I think about summer, potato salad is the first thing that comes to mind. I LOVE potato salad. Whether it is red, dill or a traditional style- I love them all. I also like to experiment with different herbs and sauces. If you like bacon then adding it to this potato salad is the perfect finish for a touch of salty crunch that will keep you coming back for seconds. Happy summer!

Ingredients:

3 Lbs. Red Potatoes

2 celery stalks chopped

2 green onions chopped

1 cup mayo

2 Tbsp. mustard

3 cooked slices bacon diced

2 tbsp. balsamic vinaigrette

1 Tbsp. Gluten Free Worcestershire

Salt and Pepper



Directions:

Wash and cut potatoes into bite size pieces, not too big but not too small. Boil potatoes until they are tender but not mushy. While they are cooking chop your celery and onions. Drain potatoes and put them in the bowl with the onions and celery. Add the crumbled bacon, mayo and mustard, vinaigrette and Worcestershire. Mix well. Taste and add more mustard or mayo to your liking. Add desired salt and pepper. Allow to chill for a few hours before serving.
